Grandpa K's Chili



My Grandpa K died when I was very young, but I do remember certain things about him. We used to browse the catalogs before Christmas together. He took me to the playground, and we got baklava afterwards. I loved him very much.

This is his chilli recipe, with a few of my own changes. It is very simple, and exceptionally delicious on a snowy evening.

Recipe

1 package hot Italian sausage (I use Boulder Sausage to avoid nitrites and nitrates)
1 can Chili beans in sauce
1 can organic tomato sauce
1 can organic peeled and cut tomatoes
1 green pepper, sliced
3 garlic cloves, sliced
2 tsp chili powder
1 tsp onion powder
2 tsp cumin
2 tsp thyme (all spices can be added to your taste)
1/2 cap full oil

Directions
1. Place oil in pan and fry up garlic and green pepper until soft
2. Add sausage and cook until done
3. Pour in beans and tomatoes and cook 5-7 minutes
4. Ladle chili into a bowl, add a dollup of sour cream
