I have already made these twice- they are that good. I got the recipe from this cookbook, with minor modifications.
Recipe
1/2 stick butter
1 onion
8 cloves garlic, minced
1/4 cup flour
1 c chicken broth
4 oz cream cheese, softened
2 cups shredded cheddar cheese
1 package chicken thighs or breasts, cooked and shredded
3 chipotle peppers in adobo sauce
6 flour tortillas
1/4 c fresh cilantro
Directions
1. Preheat oven to 350 degrees F.
2. Melt butter in medium saucepaon over medium heat. Add onon and garlic, cook and stir until onion is tender. Add flour; cook and stir 1 min. Gradually whisk in chicken broth; cook and stir 2 to 3 minutes or until slightly thickened. Add cream cheese; stir until melted. Stir in 1/2 cup shredded cheese, chicken, and chopped chipolte peppers.
3. Spoon about 1/3 cup mixture onto each tortilla. Roll up and place seam side down into baking dish. Pour remaining mixture over enchiladas; sprinkle with remaining 1 1/2 cups shredded cheese
4. Bake 20 mins or until bubbly and lightly browned. Sprinkle with cilantro.
