veggie quesadillas


I love quesadillas. I order them in restaurants, and I make them at home. I dip them in ranch, salsa, and guacamole. Basically, MMmmm.

This is a really simple recipe partly inspired by Pioneer Woman's recipe (and partly just made up of what was on sale/in the fridge).

You will need a toaster oven.

Ingredients
1 package of tortillas (ideally, from a tortillaria)
1 block of cheese (3-5 oz per 'dilla)
1 zucchini, sliced
1 red pepper, sliced
1 8 oz package mushrooms, sliced
butter for pan frying

Steps
1. Melt butter in the pan
2. Pour chopped veggies into pan (probably in batches, depending on the size of your pan)
3. Shred cheese
4. Cook veggies until they are soft
5. For each 'dilla, take one tortilla, add veggies and cheese, and toast in a toaster oven.
6. Add to a plate with dipping sauce, and let the festivities commence.
