
I hosted Mother's day this year for grandma and mom. I had a theme of Cinco (more like Ocho, but whatever) de Mayo and Happy Mom Day all rolled into one. It was a blast hosting in our new rental house on the patio.
I borrowed this recipe from Veggie Wiz and it tasted so fresh. Just like spring!
Here is her recipe. My only change was to use the stick blender:
"For 4-6 servings:
5 tomatoes
1/2 cup chopped coriander/cilantro
1 onion
2 cloves garlic
2 tbsp chopped jalapenos
1 green chilli, chopped
1 tbsp olive oil
juice of 1 lemon
1 tsp salt
Rough chop the tomatoes, onions, and garlic. Put all the ingredients into a food processor or blender, and and turn on at the lowest speed for 10-15 seconds. Check the consistency. If needed, repeat one more time. Be careful not to puree it. You want the salsa to be a little chunky.
Keep in the refrigerator for 15-20 minutes if you have the time. It helps the flavors mix. Serve with crisp tortilla chips, or use to make your favorite mexican dish!"
